Didier Joris - Merlot - Graves Rouge - 2015

When the soil perfectly matches and magnifies the vine.

Didier Joris discovered his passion for wine at a very young age. Indeed, he began his career by integrating Changins, a famous school that offers tertiary education in oenology, viticulture and arboriculture, where he taught for ten years. He then joined Caves Orsat, working there as oenologist for ten years as well. Each year, Caves Orsat buys the harvest of more than 1'100 wine estates situated between Salquenen and Martigny.

As a result of his professional experiences, his dream of owning a vineyard and a cellar came true at the age of 40. Today he is at the head of his own wine estate with a specific philosophy: magnify the soil, respect the vineyard and listen to the vine. It’s been fourteen years since Didier Joris started making wine biodynamically. His estate, located in Valais in Chamoson, is modest as this winemaker avoids technology. Instead, he produces with few resources rich in diversity wines. Didier Joris even replaced traditional vehicles with electric bicycles to move around his three hectares of vines.

His wine, in search of purity and perfection, is highly appreciated. It is served in the first class on board Swissair airplanes and is also on the wine list of the Hôtel de ville de Crissier restaurant.

Didier Joris is often recognized as a forerunner. He was one of the first to use the technique of wine elevage in wood in Switzerland. In 2015 he also replanted an old Valais variety, the Diolle, which was mentioned for the first time in 1654. This eminent oenologist also cultivates more classic grape varieties such as Merlot that he favours and works marvellously. Merlot - Graves Rouge 2015 that we present today is a perfect example.

On the nose, it offers aromas of prunes, violets and red fruits with some spicy notes. On the palate it brings all its roundness. Silky tannins lead to a final note of an exceptional length. This autumn Merlot - Graves Rouge will undoubtedly be an excellent choice to accompany a game dish, a terrine, or grilled or fried red meat.
