Domaine Vincent Dauvissat

Without doubt the wine estate of reference in the Chablis appellation.

The name Dauvissat has been associated with this estate, which has become a true monument of the Chablis vineyard, since 1931, when Robert, the grandfather of Vincent, the current keeper of the estate, decided to bottle his wine and put his name on the label. For more than three generations, the Dauvissat family has had an almost visceral attachment to this terroir located in the heart of the Yonne department.

A visionary, René, Vincent's father, refused in the 1950s to succumb to the new techniques of viticulture, based on the use of phytosanitary products, which would ultimately prove to be harmful to the life and identity of the terroir.

Domaine Vincent Dauvissat is today an emblematic family estate of the Chablis vineyard and produces wines that specialists and amateurs agree are among the greatest white wines of Burgundy.

Cultivated for four generations now, since the arrival in 2013 of Étiennette and Ghislain, Vincent's children, the estate has a remarkable terroir that extends over a dozen hectares and covers the four appellations of the Chablis vineyard: Petit Chablis, Chablis, Chablis 1e Cru and Chablis Grand Cru.

Faithful to the spirit of his elders, Vincent, who took over the reins in 1989, devoted his life to finding the best point of harmony between the vines and the terroir and has been leading the estate in organic and biodynamic agriculture since 2002, without claiming certification. Observant, patient and meticulous, an experimenter, he embodies the humility that is often found among the great winegrowers, those who claim nothing more than the right to express their sensibility and to let the terroir express itself in their wines.

Surprising in its simplicity, akin to a modest Icaunese farmhouse, Domaine Vincent Dauvissat is located in the heart of the village of Chablis, in an old village house with a small cobbled courtyard, under which is an underground vaulted cellar dating from the 17th century.

Having had the chance to meet him last year at his estate, we were confronted with a man who is passionate about his work. A winemaker with a big heart, patient, meticulous and with a remarkable natural humility. His trademark: letting nature speak for itself.

Reputation? Notoriety? These words mean nothing to him and he is totally indifferent. Getting up in the morning and finding his vines in good health is what preoccupies him. The estate does not even have a website. The only way to get in touch with them is to pick up the phone.

The wines are indescribably pure and have a long finish, making them an excellent tasting experience. The result of a very low interventionist vinification is expressive, fresh and mineral wines, reflecting the singularity of this terroir. Wines whose only defect is their extreme rarity. Indeed, the estate produces only some 70,000 bottles per year, available only on allocation.

Suitable for ageing, its 100% Chardonnay white wines are aged in barrels for about 12 months; 18 months for its only red wine of Irancy in 100% Pinot Noir, a small village appellation of 88 hectares located in the Auxerrois vineyard.
