Latest wines from Pax Wine Cellars before the break!

The history of the Pax Wine Cellars estate began in 2000 with two men's association: Joe Donelan and Pax Mahle. The first, who worked in the paper industry, had his habits at a restaurant in Massachusetts. Then one day its sommelier chef introduced him to the wines of the Rhone Valley, mainly made from Syrah, and this was a great revelation. To the point that he asked to arrange him a visit to the Sonoma Valley, a wine-growing region in California where one of the dominant grape varieties is Syrah.

The driver hired to guide Joe Donelan and his friends on this oenological journey was Pax Mahle, a young man who had arrived in this wine region a few years earlier with a goal of obtaining a sommelier chef diploma. The meeting between the two men was fruitful. It allowed Pax Mahle to find an investor, Joe Donelan, to realize his dream: in that way Pax Wine Cellars was born.

Together, Pax Mahle, a self-taught winemaker, and Joe Donelan, an investor and wine collector, have created this Sonoma-based estate, one of California's most prestigious Syrah producers. Out of 35 Pax wines reviewed by Wine Spectator, 23 scored at least 90 points.

However, in 2008 the partners disagreed on the allocation of vineyard funds and winemaking decisions. This situation led them to separate. The two wines that we present today are from the last vintage of Pax Wine Cellars before their rupture.

Pax Wine Cellars - Syrah - Griffin's Lair Sonoma Coast - 2006: to the eye it offers intense purple robe and dark purplish highlights. On the nose aromas of black olive and blackcurrant are associated with smoky and spicy touches, black pepper and meat juice. On the palate Syrah unfolds all its strength with a full body highlighted by the final persistent freshness.

Pax Wine Cellars - Syrah - Obsidian Knights Valley - 2007: to the eye it offers a purplish robe with brilliant reflections typical of the depth of Syrah. On the nose one enjoys an explosion of bilberry liqueur, aromatic herbs and aniseed touches. On the palate the flavors are concentrated, supported by a strong minerality that manages to balance the overall high level. Its aromatic profile is elegant, focused on blackcurrant puree and plum that lasts until the end.
