The PEGASUS distillery was created by Maxime Girardin, son of Vincent Girardin, a renowned winemaker from Meursault. After 15 months of construction work, the Pegasus distillery opened its doors in Meursault in 2020, becoming one of the most modern distilleries in the region.
The distillery offers three distinct spirits: gin, vodka and a citrus liqueur. The distillation method used is batch distillation, using iStill cubic stills. This combination of technology and uniqueness enables the distillery to produce refined spirits.
An important aspect of PEGASUS' DNA is its commitment to the environment. In fact, the site has been eco-designed and is energy-efficient, favouring responsible use of natural resources with optimised energy consumption.
At the heart of their values, the distillery places great importance on respect for raw materials and an authentic working philosophy. Maxime emphasises French know-how, seeking to design unique Burgundy spirits that meet new energy consumption requirements.

PEGASUS offers a selection of unique spirits, including Liqueur d'Agrumes, known as 'Eau d'Or'. It gets its golden colour from the maceration of citrus fruits and roots. Considered a panacea under Louis XIV, a supposedly universal remedy for all ills, this liqueur was a luxury product at the time because of its ingredients, citrus fruit and sugar. The composition of this liqueur has evolved over time, adapting to the modern era. It is now made from Burgundy cereals, wheat and barley, which help to lock in the aromas. Citrus fruits from Menton, such as lemons, oranges and orange blossom, add a refreshing flavour. Finally, eau de Meursault, pure water taken from an underground river more than 150 metres below the distillery, is the essential ingredient of this liqueur. With a capacity of 70 cl and an alcohol content of 23%, Liqueur d'Agrumes offers a distinctive taste experience.
Orion Gin, the first creation of the PEGASUS distillery, is a harmonious blend of five botanicals carefully selected according to their terroir and the history of their producers. The composition of this gin combines cereals from Burgundy, wheat and barley, citrus fruits from Menton, as well as three plants and a flower from the Swiss Alps, which add subtle aromatic notes. Eau de Meursault completes this blend. Orion Gin comes in a 50cl bottle and has an alcohol content of 43%.
Finally, Pegasus Vodka, inspired by the constellations and stars, is a brilliant blend of authentic ingredients and innovative distillation technology. This vodka is made from Burgundy cereals, wheat and barley, combined with eau de Meursault. Slow distillation gives this vodka a long, round finish. Produced using organic methods, Pegasus Vodka has an alcohol content of 40% and comes in a 70cl bottle.
